    Easy Fruit Oatmeal Bars

    Having three kids and feeding them healthy can sometimes be an overwhelming task. I’m always on the search for healthy and easy snacks that can also be doubled so that I can freeze the additional batch for future use. My kids love several of the bars you can purchase from Trader Joe’s but I have to buy at minimum two boxes, hiding one, and having one last until dusk the day I purchase them.     Strawberry Banana Crumb Muffins

    I was thinking of making a scone with some of the extra strawberries I had on hand but after searching around I found a strawberry banana muffin recipe on the Joy of Baking website that looked really good. This recipe worked out perfect because I also had ripe bananas. The original recipe did not include a crumb topping but I decided to add one from my favorite banana crumb muffin recipe. I made half of the batch without the crumb topping and half with. The half without the crumb topping was good but the half with the crumb topping was super delish.

    Banana Cake with Peanut Butter Frosting

    The other day I found myself with 4 very ripe bananas on my counter that needed my attention. I thought of making some banana muffins or banana bars but realized I’ve never made a banana cake. So the search was on for a banana cake recipe. I found a recipe that looked promising and I started the process of doctoring it up to make it healthier. I replaced half of the butter with unsweetened applesauce, added vanilla extract, reduced sugar, and substituted low fat milk and sour cream for the buttermilk.     Carrot Cupcakes with Cream Cheese Frosting

    Carrot cupcakes seemed like a perfect match for my first Easter brunch. I chose this recipe after reading great reviews and seeing that the ingredients were healthy. I didn’t have to do my usual tweaking that I so often like to do  ;-). I only omitted the nuts due to some allergies in the family. These cupcakes turned out moist and flavorful, tasting wonderful on their own. Let me tell you though the cream cheese frosting was a perfect match for the cupcake, giving it just a little something extra in each bite. These carrot cupcakes definitely helped in making my first brunch a success.
