Homemade Nutter Butters

This cookie was just a blast to make. I had so much fun recreating my version of Nutter Butters. They couldn’t have turned out any better than I had envisioned. I combined a recipe that I found on Allrecipes for the cookie and Martha Stewart’s recipe for the peanut butter filling. What a combo! Definitely better tasting than the store bought version.

I omitted the shortening and used unsalted butter only, reducing it by 1/4 cup. To make up for the loss of butter I added 1/4 cup more of crunchy peanut butter ;-). I reduced both sugars by 1/4 cup just to lower the sugar a bit.

I think these would look great individually wrapped for a bake sale. Get that glass of milk ready because your going to need it with this cookie! Enjoy!

Oatmeal Peanut Butter Cookies

3/4 cup unsalted butter
3/4 cup brown sugar
1/2 cup white sugar
1 1/4 cups peanut butter ( I used crunchy, yum)
2 eggs
1 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 cups quick cooking oats

Peanut Butter Filling

4 tablespoons unsalted butter
3/4 cup smooth peanut butter
1/4 cup powdered sugar
1/2 teaspoon salt ( taste before adding, may not need )
1/2 teaspoon vanilla extract (optional)

Directions:

Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In large a bowl, cream together butter, brown sugar, white sugar, and peanut butter until smooth. Beat in eggs one at a time until well blended. Combine the flour, baking soda, and salt in separate bowl. Stir flour mixture into creamed mixture. Mix in the oats until combined. To make the peanut shaped cookie you will need a small cookie scoop, teaspoon size. Be sure to keep balls uniform while scooping. Place two balls side by side touching on to your cookie sheets leaving about 2 inches in between the sets of balls. Once you have placed all balls on the cookie sheet take a fork and gently press into both balls, one at a time. Then press fork across. Baked in for 10-12 minutes until light brown. Cool completely before trying to remove from parchment paper. I got 50 cookies out of this recipe (made 25 sandwiched cookies).

 

 

For the Peanut Butter Filling:

In the bowl of your mixer combine butter, peanut butter, and vanilla extract. Beat until blended and then add powdered sugar until desired consistency is reached.

Now you are ready to fill the cookies. Take one cookie and spread peanut butter filling on the flat side of cookie. Take another cookie and stick flat side on to the filling. There you have it, a Homemade Nutter Butter! Enjoy!
