Ringing In The New Year With Truffles
It’s that time again when one year has just ended and another is beginning. It’s time to sit down and think about what you want to accomplish in the new year. What better way to end a new year and start a new year with a sweet and easy treat, Easy Decadent Truffles. Chocolate helps me with any thought process. I’m sure some of you can relate, LOL.
This recipe is so simple and fun. You can choose your favorite extracts and favorite coatings allowing for endless possibilities. You can also coat the truffles in yet another layer of chocolate so that you have a hardened chocolate on the outside with a melt in your mouth truffle on the inside. The end result looks professional as if you spent hours making them.
I divided mine into 3 equal parts. In one bowl I added 1 tablespoon of Baileys. In the the next bowl I added 1 teaspoon orange extract and in the last bowl I added 1 teaspoon pure vanilla extract. After letting the truffle mixture harden in the refrigerator for about 45 minutes I used my small scoop and rolled truffle balls. I rolled the Baileys flavored truffles into toasted coconut and chopped almonds. I rolled the orange flavored truffles in sanding sugar and I rolled the vanilla flavored truffles in cocoa powder. Don’t let this easy sweet pass you by in the new year!
Easy Decadent Truffles

1 ( 8 ounce ) package cream cheese, softened
3 cups confectioners’ sugar, sifted ( I used 2 cups)
3 cups semisweet chocolate chips, melted ( I used 2 cups)
1 1/2 teaspoons vanilla extract
Directions
In large bowl, beat cream cheese until smooth. Gradually beat in confectioners’ sugar until well blended. Stir in melted chocolate and vanilla (hold off on stirring in vanilla if you are going to make more than one flavor) until no streaks remain. Refrigerate for about 1 hour. Shape into 1 inch balls.
