Our Family Fun Night Cookie

Peanut Butter, Chocolate Chips, and Oatmeal make this cookie loved by all in our house! Friday Family Fun Night aka FFN is our night to spend time together as a family, enjoy a treat, and unwind from the week. We usually choose a family friendly movie, play charades (kids favorite!), or pick out a board game. The kids really look forward to popcorn and a homemade treat on Family Fun Night.

This cookie is our standby because it’s so quick to make and the ingredients needed to make it are always available. I use a medium sized cookie scoop to make these cookies on the larger side. Texture is chewy with a light crunch. This cookie may just very likely find its way to your Family Fun Night. Enjoy!

Family Fun Night Cookies
aka Outrageous Chocolate Chip Cookies recipe

1/2 cup butter
1/2 cup white sugar
1/3 cup packed brown sugar
1/2 cup peanut butter
1/2 teaspoon vanilla extract
1 egg
1 cup all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup rolled oats
1 cup semisweet chocolate chips

Directions:

Preheat oven to 350 degrees. In a medium bowl cream together the butter and sugars. Mix in peanut butter, vanilla, and egg. In separate bowl mix flour, baking soda, and salt. Add flour mixture to the batter and mix just until blended. Add oats and chocolate chips and mix just until evenly distributed. Drop by tablespoons onto cookie sheets lined with parchment paper. Press down slightly on each cookie so they will bake evenly. See my pic for example. Cook just until you see edges brown lightly, about 10-12 minutes. Just make sure you don’t overcook. The center will look like it might need to stay in longer but as long as the edges look done take it right out. Let cookie cool for 5 minutes on baking sheet and then move to cookie rack. Enjoy!
