    Peanut Butter Cookies

    I’m in love with these cookies and they are now at the top of my list. The texture is ever so chewy and the flavor is bursting with peanut butter. Move over Family Fun Night Cookie! LOL. The only thing that I changed about this cookie was to replace 1/2 of the peanut butter chips with semi sweet morsels. Don’t change a thing though if your taste buds are craving peanut butter only ;-).

    Peanut Butter Moo’d Muffins

    It’s been awhile but I’m back with a new blog post for all you Peanut Butter Moo’d lovers. If you’re not familiar with Jamba Juice’s Peanut Butter Moo’d, it’s a smoothie consisting of peanut butter, bananas, a chocolate base, soy milk, and nonfat frozen vanilla yogurt. It’s very high in calories so I tend to just buy them for the kids. You can easily make your own version at home which we do quite often.

    Homemade Nutter Butters

    This cookie was just a blast to make. I had so much fun recreating my version of Nutter Butters. They couldn’t have turned out any better than I had envisioned. I combined a recipe that I found on Allrecipes for the cookie and Martha Stewart’s recipe for the peanut butter filling. What a combo! Definitely better tasting than the store bought version. I omitted the shortening and used unsalted butter only, reducing it by 1/4 cup. To make up for the loss of butter I added 1/4 cup more of crunchy peanut butter ;-). I reduced both sugars by 1/4 cup just to lower the sugar a bit. I think these…

    Banana Cake with Peanut Butter Frosting

    The other day I found myself with 4 very ripe bananas on my counter that needed my attention. I thought of making some banana muffins or banana bars but realized I’ve never made a banana cake. So the search was on for a banana cake recipe. I found a recipe that looked promising and I started the process of doctoring it up to make it healthier. I replaced half of the butter with unsweetened applesauce, added vanilla extract, reduced sugar, and substituted low fat milk and sour cream for the buttermilk.     Our Family Fun Night Cookie

    Peanut Butter, Chocolate Chips, and Oatmeal make this cookie loved by all in our house! Friday Family Fun Night aka FFN is our night to spend time together as a family, enjoy a treat, and unwind from the week. We usually choose a family friendly movie, play charades (kids favorite!), or pick out a board game. The kids really look forward to popcorn and a homemade treat on Family Fun Night.
