I’m so excited to finally share the making of my daughter’s 8th birthday cake. What a blast I had making this! I felt all of my creative juices flowing with every step of this challenge. The other day I found myself with 4 very ripe bananas on my counter that needed my attention. I thought of making some banana muffins or banana bars but realized I’ve never made a banana cake. So the search was on for a banana cake recipe. I found a recipe that looked promising and I started the process of doctoring it up to make it healthier.
I replaced half of the butter with unsweetened applesauce, added vanilla extract, reduced sugar, and substituted low fat milk and sour cream for the buttermilk. With all of the changes made my cake still turned out moist and flavorful. I had planned to make a cream cheese frosting but then I got the idea to combine two of my kids favorite flavors, banana and peanut butter. Continue reading »

If you are looking for a moist yet easy chocolate cake recipe then you came to the right spot. This cake won’t disappoint. I have made this cake in a bundt pan, 9×13 pan, and 9″ round cake pans, all with great results. I was a little skeptical when I read that you add 1 cup of boiling water. There are two Blueberry Coffee Cake recipes I love to make and I thought I would post about this one first since it’s so quick and easy to make. I found this recipe on the Joy of Baking website and have made it many times. Usually I will add blueberries to half of the cake and leave the other half plain for my kids.

The cake batter has such a great smell and taste. I make mine in a spring form pan so I can easily release the cake and serve. I’ve had success with frozen and fresh blueberries. It always turns out great and you can’t go wrong with this easy to make Blueberry Coffee Cake. Continue reading »

Valentine’s Day is almost here! I was inspired to make Heart Cake Pops this year after seeing all the wonderful  Cake Pops on Bakerella’s website. This was my first attempt at making cake pops and it was a learning process but well worth the end result.

Two things I learned in the the process was that if you are going to make shaped cake pops such as hearts like I did you definitely need to make them thick enough for the lollipop stick  to insert into without the cake pop falling apart. I made mine about 3/4″ thick and they really needed to be at least 1 inch thick or more. Sadly I lost a few hearts due to this. Continue reading »
