Baked Acorn Squash

Let me just start by saying this is so SIMPLE to make!

Baked acorn squash is one of my favorite Fall desserts and I look forward to having it each year. Baked in a steam bath, lightly buttered, and sprinkled with brown sugar.

This year I think I finally got my daughter hooked ;-). She ate three bites and came back asking for more but I had already devoured both halves. Bad mommy! Oh I can’t forget my youngest. He ate one bite and didn’t complain.

The next time your in the grocery store and see the wonderful varieties of squash available go ahead and pick up an acorn squash. You won’t be disappointed, I guarantee.

Baked Acorn Squash

1 Acorn Squash
1 tablespoon butter divided, room temperature
2 tablespoons brown sugar
Cinnamon (optional)

Directions:

Preheat Oven to 350 degrees. Wash and cut acorn squash in half. Scrape inside of each half to remove seeds and stringy fibers. Place halves cut side up in about 2 inches of water. Take 1/2 tablespoon of butter and rub inside each half. Sprinkle each half with 1 tablespoon of brown sugar. Sprinkle with cinnamon if you prefer. Cover and bake for 45-60 minutes or until inside is soft when poked with a fork. Be careful to not burn your lips/mouth with the hot liquid in the center of each half. Enjoy!

Note: You can always add more butter, brown sugar, or cinnamon to your own liking!
