Paula Deen’s Orange Brownies

Ok, you all know how Paula Deen loves to add a lot of butter to her recipes, lol. She didn’t hold back on the butter with this recipe! The original recipe calls for 2 sticks of butter and whenever a recipe calls for more than one stick of butter I cringe. I couldn’t resist trying her recipe for Orange Brownies so I decided to go with my instinct and cut the butter in half. I also noticed that the recipe called for 2 cups of sugar so I decided to cut that in half too. Then I read some reviews and reduced the amount of eggs.

As you can see, the recipe has now changed dramatically, lol, but I still prayed for a good outcome. Now on to the frosting. I couldn’t leave that unchanged now could I. I ended up reducing the butter to 1 tablespoon and cut the rest of the ingredients in half based on reviews. I didn’t have light cream cheese on hand but will try using it next time to reduce even more fat.

I’m sure you’re wondering if this brownie was even edible at this point. The brownies turned out great with a light and refreshing flavor. The frosting added a perfect touch. Seriously you can not tell that the butter and sugar have been reduced. My family enjoyed them and I’m definitely going to make them again!

Orange Brownies
adapted from Paula Deen’s Orange Brownies

1 1/2 cups all purpose flour
1 cup granulated sugar
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
3 eggs
2 teaspoons pure orange extract
1 teaspoon grated orange zest
2 tablespoons fresh orange juice (my addition)

Directions:

Preheat oven to 350 degrees F. Grease a 13 by 9 by 2 inch pan.

Stir together flour, sugar, and salt in bowl. Add butter, eggs, orange extract, orange zest, and fresh orange juice. Using a handheld electric mixer(used my stand mixer), beat until well blended. Pour batter into prepared pan and bake for 30 minutes, or until light golden brown and set. Remove from oven, allow to cool. Spread Cream Cheese Frosting over completely cooled brownies. Cut into squares.

Orange Cream Cheese Frosting

4 ounces cream cheese, softened
1 tablespoon softened butter
2 1/2 cups confectioners’ sugar
2 tablespoons orange zest
2 tablespoons orange juice

In large mixing bowl, whip the butter and cream cheese together with a hand-held electric mixer (again I just used my stand mixer). Gradually beat in the confectioners’ sugar until it is all combined and smooth. Beat in the orange zest and juice. Spread over brownies.
